Cranberry Bread


Regular
3 cups flour
1 ½ teaspoon baking powder
¾ teaspoon soda
1 ½ teaspoons salt
1/3 cup + 3 T butter
1 cup + 2 T sugar
3 eggs
1 cup + 2 T orange juice
1 ½ Tablespoons grated orange peel
1 cup crasins chopped
¾ cup chopped pecans

Low Fat
3 cups flour
1 ½ teaspoon baking powder
¾ teaspoon soda
1 ½ teaspoons salt
1/4 cup butter
¼ cup non fat vanilla yogurt
1 cup + 2 T sugar
1 whole egg + 4 egg whites
1 cup + 2 T orange juice
1 ½ Tablespoons grated orange peel
1 cup crasins chopped
¾ cup chopped pecans


1.         Preheat oven to 350
2.         Grease and flour loaf pans (1 large & 1 medium or 6 small)
3.         In a bowl mix flour, soda, salt and baking powder.  
4.         In a mixer cream butter (yogurt), and sugar.  Beat until creamy.  Add eggs, orange juice and zest.  Beat until well mixed.  Scrape the sides.
5.         Add the dry ingredients.  Mix only until incorporated.  DON’T OVER MIX!!! 
            If using the mixer low speed only, or stir by hand.  Stir in cranberries and nuts by hand.
6.         Pour in pans, bake 20-30 minutes.


Corn Dogs

1 c. yellow cornmeal
1 c. all purpose flour
1/4 tsp salt
1/8 tsp black pepper
1/4 c. white sugar
4 tsp baking powder
1 egg
1 c. milk
1 qt. vegetable oil for frying
2 (16oz) pkgs beef frankfurters
16 wooden skewers or chopsticks

In a medium bowl, combine cornmeal, flour, salt, pepper, sugar, and baking powder. Stir in eggs and milk.  Preheat oil in a deep saucepan over medium heat.  Insert wooden skewers into frankfurters.  Roll frankfurters in batter until well coated.  Fry 2-3 corn dogs at a time until lightly browned, about 3 minutes.  Drain on paper towl.

**Opt: cut bricks of cheese into 1" rectangles.  Insert skewer and roll in batter.  Fry until golden brown to make cheese sticks.
